***Important Note***

Since we are a green group, we try not to use disposables, especially styrofoam cups and plates. Please bring your own cup, a plate and silverware for yourself and anyone who may be coming with you.

Please bring a little tent card or paper that lists the ingredients of the dish you bring. We want to respect people with dietary concerns and allergies.

Oh, did we tell you that one of the best ways to keep our environment clean and sustainable is to reduce our meat and seafood consumption? It is also an easy and inexpensive way to keep a healthy and fit body. While we are being good to the environment, we are also doing ourselves a favor. Plus, vegetarian and vegan food are delicious!

If you need some recipe ideas, check out http://www.chooseveg.com/vegan-recipes.asp. We would LOVE to be your guinea pigs and try out your dishes! ;)

On a side note, we have people who have asked us the difference between a vegan and vegetarian diet.

Vegetarian: No meat or seafood
Vegan: No meat, seafood, eggs, dairy, or honey (for some people)

Look forward to seeing you there!

Vegan Cheese Cake
Preheat oven to 350 degrees. Prepare pie crust (graham cracker is good with this). Blend together 2 8oz containers of vegan cream cheese (tofutti is great, can get at Krogers or many health food stores), 1 cup sugar and 2 tsp vanilla. Then add 3-5 tbsp lemon … Read Morejuice to taste. Finally add 2 tbsp corn starch. (tricky part with this is that if you add it too quickly it will lump in the mixture, so add slowly, preferably using a sifter to break up the lumps). Then pour into the crust and pop into the oven for 45 mins or until a nice caramel color and puffy. Store in refrigerator. Makes one pie. To make my fruit syrup I pick a fruit, frozen or fresh, and blend. Add sugar or maple syrup to taste. With frozen berries you may need to add a touch of water to get it flowing.

Yummy stuff. Happy baking!

OMG!!! Bethany’s Cheesecake was DEVINE!!! I never thought vegan cheese cake could taste so good!!! Sinfully delicious indeed- thanks for posting that recipe!!!!

As for anyone who wanted the Chocolate Chip Cookie Recipe, it goes as follows:
wet ingredients
4 1/2 teaspoons Energy Egg Replacer Powder
6 TBSP water
(add these two ingredients to blender and blend for 2 minutes- then add to following)
3/4 cup raw sugar
3/4 cup brown sugar
1 cup earth balance natural buttery spread (softened to room temp)
2 Teaspoons vanilla extract
(mix all wet ingredients together)

2 1/4 cup of all purpose flour
1 teaspoon Baking Soda
1 teaspoon Salt
mix together and then add to wet mix incrementally (1/2 cup or so at a time until its all one batch)

add 1 1/2 cups of vegan bittersweet chocolate chips
add 1 cup walnuts (or pecans or none- nuts optional)
mix all together, spoon onto parchment covered cookie sheet and bake at 350 for 12 minutes

Thanks for a great time everyone- it was good to see you!

And for anyone who wanted the article that shows overwhelming and compelling evidence that human characteristics are physiologically and anatomically herbivorous, the article “The Comparative Anatomy of Eating” by Dr. Milton Mills can be found here:

Hey Eriyah,
With those cookies… have you ever tried replacing the butter with applesauce? Wish I’d had the belly room to try one of your cookies. Maybe next time. Thanks so much for driving all the way into Newark to join us.
